I'm a Kiwi living in Melbourne and I'm just about to make Lolly cake for my son's kindy christmas party tomorrow. I too have trouble finding the right ingredients so I've always used Banana Lollies in place of eskimos or fruit puffs. Instead of Malt I use plain Arrowroot biscuits and then add some cocoa to get a chocolate flavour. I roll the cake in sprinkles instead of coconut as the kids seem to go for that. In NZ years ago I used to be able to find plain chocolate biscuits to crush (pak n save I remember used to sell Snoopy ones which were great). But I can't find them here.

Hi,
I am from Lollyworld, the lolly shop at Lawnton, Brisbane, Australia.
Yes we have New Zealanders in our shop raving about Lolly Cakes everyday.
The original Fruit Puffs ( I think it was made by Pascalls) are not available any more.
We do have a New Zealand substitute made by the brand Rainbow. They are the only Fruit Puffs I can find around, they are a little different to the original, a little denser and not as foamy.
When no Fruit Puffs were available in Australia the die hard fans used Eskimos (made by Pascalls) and broke them up to spread through the Lolly Cake mix.
New Zealanders have to be the most loyal customers to their home country foods.
We even have the Maggi Onion Soup in store and customers always remark why would soup be in a lolly store? Because it is used to make a dip and our New Zealand customers are fanatical about it.

Too my fellow Lolly Cake Lovers in Brisbane...
Fruit puffs are available at Confectionary Warehouse, Nudgee Rd, Hendra as well as the lollyshop at Lawnton (opposite train station). Best biscuits to use over here are the Paradise brand of Malt biscuits. Only catch is that you have to buy 2 packets as they are only packed as 200 grams.

Have just made a double batch for a work bake off. I used the caramel condensed milk - have tried this before & it is yummy! Am experimenting (I know, this could be dangerous!) by putting in some chocolate biscuits with the malt ones. We'll have to see how it goes down, but it tasted good freshly mixed.

Oh and I think if you do your research lil Miss Matilda you will find that us cleaver Kiwis did come up with the Pavlova and the anzac biscuits buy the sounds of things, check this link out if you detest. http://en.wikipedia.org/wiki/Pavlova_(food)
Now that I've said my bit, i'm going to go make some lolly cake and eat some before the kids get ahold of it! :)

Hey proud kiwi

I have used pineapple lumps as a substitute - delicious but they're far too hard for the cake. Everyone who tried it almost broke a tooth!

Hmm, softer then a Clinker, harder then a Marshmellow...

What about those foamy, pastel coloured... things... you get in bags of lolly mix? They tend to appear around Christmas time, they're in various shapes, they all taste the same, they resist biting at first then give in. They're like lolly bananas but softer.

Think they sound about right?
